White beans (cannellini, canned, drained): 100g (1/2 cup), Ground turkey (lean): 85g (3 oz), Lettuce (butter or romaine): 60g (4 large leaves), Carrot: 30g (1 small, grated), Bell pepper (red): 30g (1/4 cup, diced), Green onions: 10g (2 tbsp, chopped), Garlic: 3g (1 clove, minced), Ginger: 5g (1 tsp, grated), Soy sauce (low-sodium): 10ml (2 tsp), Rice vinegar: 5ml (1 tsp), Sesame oil: 5ml (1 tsp), Sriracha: 5g (1 tsp, optional), Hoisin sauce: 10g (2 tsp), Cilantro (fresh): 5g (1 tbsp, chopped), Lime juice: 5ml (1 tsp), Salt: 1g (1/4 tsp), Black pepper: 1g (1/4 tsp)

Recipe Instructions

1. Heat 5ml sesame oil in a skillet over medium heat. 2. Add 3g minced garlic and 5g grated ginger. Cook for 30 seconds. 3. Add 85g ground turkey and cook until browned, about 5 minutes. 4. Add 30g diced bell pepper and cook for 2 minutes. 5. Add 100g white beans, 10ml soy sauce, 5ml rice vinegar, 10g hoisin sauce, and 5g sriracha (if using). Cook for 2-3 minutes until heated through. 6. Stir in 10g chopped green onions, 5g chopped cilantro, and 5ml lime juice. 7. Mash some of the beans slightly to help bind the mixture. 8. Spoon the mixture into 60g lettuce leaves. 9. Top with 30g grated carrot before serving.
