Recipe Instructions

1. Preheat oven to 350°F (175°C) and lightly grease a baking dish. 2. In a small bowl, mix 10g ground flaxseed with 30ml water. Let sit for 5 minutes to form a flax egg. 3. In a large bowl, combine 80g rolled oats, 3g cinnamon, 1g nutmeg, 2g baking powder, and 1g salt. 4. In another bowl, whisk together 240ml plant-based milk, 30g maple syrup, 60g applesauce, the flax egg, and 2.5ml vanilla extract. 5. Add the wet ingredients to the dry ingredients and stir to combine. 6. Fold in 150g diced apple and 20g chopped walnuts (reserve 10g for topping). 7. Pour the mixture into the prepared baking dish and sprinkle with the remaining walnuts. 8. Bake for 35-40 minutes until golden and set. 9. Let cool for 5 minutes before serving.
