Recipe Instructions

1. Cook 100g frozen peas in boiling water for 3 minutes until tender. Drain and rinse under cold water to cool. 2. In a bowl, roughly mash 75g avocado with a fork. 3. Add cooled peas and lightly mash, leaving some peas whole for texture. 4. Stir in 10ml lemon juice, 5g chopped mint, salt, and pepper. 5. Toast 60g whole grain bread. 6. Spread the pea and avocado mixture over the toast. 7. Top with 20g crumbled feta, 1g red pepper flakes (if using), and a drizzle of 5ml olive oil.
