Ingredients

Wholegrain bread: 60g (2 slices), Low-fat ricotta cheese: 60g (4 tbsp), Orange marmalade: 15g (1 tbsp), Fresh orange: 80g (1 small, segmented), Pistachios: 10g (1 tbsp, chopped), Mint leaves: 2g (few leaves, chopped), Unsweetened soya milk: 100ml, Matcha tea: 1 serving (1 tsp matcha powder + 100ml hot water)

Recipe Instructions

1. Toast 2 slices of wholegrain bread until golden brown. 2. Spread 60g low-fat ricotta cheese on the toast, then top with 15g orange marmalade and 80g segmented fresh orange. Sprinkle with 10g chopped pistachios and 2g chopped mint leaves. 3. For the matcha tea: Sift 1 tsp matcha powder into a cup. Add hot water (not boiling, around 70°C/160°F) and whisk until smooth. Add 100ml unsweetened soya milk and whisk again until frothy. Enjoy!
