Recipe Instructions

1. Toast 2 slices of sourdough bread until lightly golden. 2. Spread 30g hummus on one slice of bread. 3. Layer 15g spinach, 30g sliced cucumber, 30g roasted red peppers, 15g sliced red onion, and 15g sliced olives on top of the hummus. 4. Sprinkle with 20g crumbled feta cheese. 5. In a small bowl, mix 5ml olive oil, 5ml balsamic vinegar, 1g dried oregano, 1g salt, and 1g black pepper. 6. Drizzle the dressing over the vegetables. 7. Top with the second slice of bread and cut in half before serving.
