Whole wheat tortilla: 50g (1 medium), Spinach: 40g (1.25 cups, fresh), Chickpeas: 60g (1/2 cup, cooked/canned), Cucumber: 50g (1/3 medium, diced), Cherry tomatoes: 50g (1/4 cup, halved), Red onion: 20g (2 tbsp, diced), Feta cheese: 20g (1 1/4 tbsp, crumbled), Hummus: 20g (1 1/4 tbsp), Lemon juice: 5ml (1 tsp), Olive oil: 2.5ml (1 tsp), Dried oregano: 1g (1/4 tsp), Salt and black pepper: to taste

Recipe Instructions

1. Warm the whole wheat tortilla in a pan for 1-2 minutes until pliable. 2. In a bowl, combine 40g spinach, 60g cooked chickpeas, 50g diced cucumber, 50g halved cherry tomatoes, 20g diced red onion, 20g crumbled feta, and 20g hummus. Drizzle with 5ml lemon juice, 2.5ml olive oil, and sprinkle with 1g dried oregano, salt, and black pepper. 3. Toss to combine. 4. Place the mixture in the centre of the tortilla, fold in the sides, and roll up tightly. Enjoy!
