Whole wheat tortilla: 60g (1 large), Spinach: 40g (1.25 cups, fresh), Chickpeas: 80g (1/2 cup, cooked), Cucumber: 50g (1/3 medium, diced), Cherry tomatoes: 50g (1/4 cup, halved), Red onion: 20g (2 tbsp, diced), Feta cheese: 30g (2 tbsp, crumbled), Hummus: 30g (2 tbsp), Lemon juice: 5ml (1 tsp), Olive oil: 5ml (1 tsp), Dried oregano: 1g (1/4 tsp), Salt: 1g (1/4 tsp), Black pepper: 1g (1/4 tsp)

Recipe Instructions

1. In a small bowl, combine 80g chickpeas, 50g diced cucumber, 50g halved cherry tomatoes, 20g diced red onion, 5ml lemon juice, 5ml olive oil, 1g dried oregano, 1g salt, and 1g black pepper. 2. Spread 30g hummus on the 60g whole wheat tortilla. 3. Layer 40g spinach on top of the hummus. 4. Spoon the chickpea mixture over the spinach. 5. Sprinkle with 30g crumbled feta cheese. 6. Fold in the sides of the tortilla and roll up tightly. 7. Cut in half diagonally and serve.
