Whole grain tortilla (8-inch): 1 (45g), Hummus: 30g (2 tbsp), Cucumber: 30g (1/3 cup, sliced), Cherry tomatoes: 40g (1/4 cup, halved), Red bell pepper: 30g (1/4 cup, sliced), Kalamata olives: 15g (5-6, pitted and sliced), Feta cheese: 15g (1 tbsp, crumbled), Baby spinach: 15g (1/2 cup), Lemon juice: 5ml (1 tsp), Dried oregano: 1g (1/4 tsp)

Recipe Instructions

1. Lay the whole grain tortilla flat on a clean surface. 2. Spread 30g hummus evenly over the tortilla, leaving about 1 inch around the edges. 3. Layer 15g baby spinach, 30g sliced cucumber, 40g halved cherry tomatoes, 30g sliced red bell pepper, and 15g sliced olives on top. 4. Sprinkle with 15g crumbled feta cheese. 5. Drizzle with 5ml lemon juice and sprinkle with 1g dried oregano. 6. Fold in the sides of the tortilla, then roll it up tightly from the bottom. 7. Cut in half diagonally and serve immediately.
