Recipe Instructions

1. Preheat oven to 350°F (175°C). Grease a loaf pan with a little coconut oil. 2. In a bowl, mash 200g ripe bananas with a fork until smooth. 3. Add 50g egg, 60g Greek yogurt, 30g honey, 30ml melted coconut oil, and 5ml vanilla extract. Mix well. 4. In another bowl, whisk together 120g whole wheat flour, 8g matcha powder, 3g baking soda, 3g baking powder, and 1g salt. 5. Add the dry ingredients to the wet ingredients and stir until just combined. 6. Fold in 30g chopped walnuts. 7. Pour the batter into the prepared loaf pan. 8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. 9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. 10. Slice into 8 pieces (150 calories per slice).
