Recipe Instructions

1. Prepare tofu: Press and cube 150g extra-firm tofu. Toss with 5g jerk seasoning. 2. Cook tofu: Heat 10ml coconut oil in a pan and cook tofu until golden and crisp on all sides. 3. Make salsa: In a bowl, combine 75g black beans, 75g diced mango, 50g diced bell pepper, 30g diced red onion, 10g chopped cilantro, and 15ml lime juice. 4. Serve: Place 75g cooked brown rice as base, top with jerk tofu, mango black bean salsa, and 50g sliced avocado.
