Recipe Instructions

1. Heat 5ml olive oil and 5g butter in a large pan over medium heat. 2. Add 50g diced onion and cook for 3-4 minutes until softened. 3. Add 6g minced garlic and cook for 30 seconds until fragrant. 4. Add 80g Arborio rice and stir for 1-2 minutes until translucent around the edges. 5. Add 60ml white wine (if using) and stir until absorbed. 6. Add 125ml (1/2 cup) hot broth and stir until mostly absorbed. Continue adding broth 125ml at a time, stirring frequently, until rice is creamy and al dente (about 18-20 minutes total). 7. Stir in 100g frozen peas and 50g diced ham. Cook for 3-4 minutes until peas are tender and ham is heated through. 8. Remove from heat and stir in remaining 5g butter, 20g grated Parmesan, and 5g chopped mint. 9. Season with salt and pepper to taste. Let stand for 2 minutes before serving.
