Banana: 100g (1 medium, mashed), Eggs: 100g (2 large), Protein powder (vanilla): 30g (1 scoop), Almond flour: 30g (1/4 cup), Baking powder: 2g (1/2 tsp), Cinnamon: 2g (1/2 tsp), Vanilla extract: 2ml (1/2 tsp), Greek yogurt: 60g (1/4 cup, for topping), Berries: 50g (1/3 cup, for topping), Coconut oil: 5ml (1 tsp for cooking)

Recipe Instructions

1. In a bowl, mash 100g banana until smooth. 2. Add 2 eggs and 2ml vanilla extract, and whisk until well combined. 3. In another bowl, mix 30g protein powder, 30g almond flour, 2g baking powder, and 2g cinnamon. 4. Add the dry ingredients to the banana mixture and stir until just combined. 5. Heat a non-stick skillet over medium heat and lightly coat with coconut oil. 6. Pour 1/4 cup of batter for each pancake. 7. Cook until bubbles form on the surface, about 2 minutes, then flip and cook for another 1-2 minutes. 8. Serve topped with 60g Greek yogurt and 50g fresh berries.
