Ingredients

Whole grain bread: 60g (2 slices), Avocado: 50g (1/2 medium), Lemon juice: 5ml (1 tsp), Red pepper flakes: 1g (1/4 tsp), Cherry tomatoes: 50g (1/4 cup, halved), Microgreens: 10g (1/4 cup), Sesame seeds: 5g (1 tsp), Egg: 50g (1 large), Matcha powder: 1g (1/4 tsp, for drink), Hot water (70°C): 100ml (1/2 tsp, for matcha), Unsweetened soya milk: 100ml (scant 1/2 cup, for matcha, frothed if desired), Salt: to taste, Black pepper: to taste

Recipe Instructions

1. Toast 60g whole grain bread, mash 50g avocado with 5ml lemon juice and 1g red pepper flakes, then spread the avocado mixture over the 60g toasted bread, top with 50g halved cherry tomatoes, 10g microgreens, and 5g sesame seeds. 2. Cook 50g egg (poached or fried as desired) and place on top of the toast. 3. For the matcha drink, whisk 1g matcha powder with 100ml hot water (70°C) until smooth, then add 100ml frothed unsweetened soya milk if desired and serve alongside the toast. 4. Season with salt and black pepper to taste at the end.
